I would like to see a series where it occurs at Star Fleet Academy. Would this be something Trekkies would watch?

I voted yes, I would watch with the usual caveat that it is well written.
Many fan likely wouldn't, it might simply be too different from what has come before. But if it's well written and interesting enough then the reluctant fans (some) might gravitate to the show.
Moving from a starship focused show to one set in a future city environment. The lives of the cadets, instructors, their friends and families. Less action/adventure, more drama.
Personally, I've alway wanted to see more of future Earth than we have, more of the civilian life, a society with a large number of aliens.
I would imagine that the show would spend little time actually in class rooms and lecture halls.

I'd watch anything with Star Trek in the title, we all would, let's not fool ourselves.
Would I enjoy it though? That's all down to the writing like anything else. Could end up great, could end up a teen relationships high school soap opera in space.

I loved Smallville, I liked Buffy and would probably like something similar, along the lines of the academy scenes in ST'09 with Kirk, Spock and the rest.
I would enjoy that. I thoroughly enjoyed any Academy-esque series of books from any era, TOS, TNG, etc.
There were two comic book series set at Starfleet Academy (one by Marvel in the 1990s and a more recent one by IDW earlier this year) and I enjoyed them both. Both books centered on a small group of cadets that underwent training missions together, and more often than not those training missions turned into situations with real consequences, sometimes of a life-and-death variety. In both series, the Academy itself was merely where the cadets came from and where they went home to after a mission--the majority of stories actually took place away from the Academy, often aboard different starships. If a new series can be anything like those comics, with a mix of cadets with a lot to learn and a focus on action & adventure, I'd watch it in a heartbeat.
No, I wouldn't watch it because I don't think it would ve very interesting. It would be set on earth which means no exploring, it would probably feel like a college series with most of the plots revolving around relationships (both romantic and platonic) because with earth being a utopia there won't be many outside problems the main characters would face and I doubt they can do many stories about warp mechanics 101 or the exobiology exam.
Setting a Star Trek series on earth doesn't take advantage of the potential Star Trek offers at all, the personal stories can happen on a ship or a starbase as well but it allows for more adventures.

Past school dramas best episodes are often those that focus on the cultures that exist on campus and also the societies around the campuses.
Starfleet academy would not exist in complete isolation, it's located in San Francisco.
I doubt this as well. If you look at dramas that have centered on students in a academic environment (like A Different World, Felicity and Veronica Mars) class room time is included but rarely is featured.
This would be a be a new view point on the Star Trek universe, not a old one.
Only if I hear good things about it, I wouldn't stand in line to be one of the first ones to see it.
It's funny that you mention Veronica Mars, it's one of my favourites (especially the first season) but what appealed to me initially was the "noir murder mystery detective show" angle, if someone had told me it's about "a girl in high school who lives with her father" I wouldn't have bothered.
So if the show is actually about something else and the characters just happen to be cadets, teachers etc. then maybe but if the pitch is just "academy series" ... I cannot get excited for that.

Nah. I don't need my Trek CWified. Nor do I want to spend 60 minutes watching a bunch of twenty somethings learn about heroics in a classroom. I'd rather watch actual heros doing actual heroics...or at least utterly messing things up on a planetary scale despite the best of intentions.
That one episode with Wesley and NotTomParisButKinda was enough academy drama to last me a lifetime, and that involved a student dying from negligence and a coverup. That's the most extreme event you can have at a school. There's no topping it, at best you're going to ape it. And an academy show would drag that plot out over 1 or 2 whole seasons. No thank you.

I guess it's most interesting when showing the past of an established character, although that means they can't die or suffer anything which would conflict with the show which was made earlier but set later.
I guess I'm biased. One of my favorite sci-fi novels growing up was Heinlein's "Space Cadet" an it took a variety of different adventures in schooling. Given that in that book, the Solar Patrol was limited to just Earth's Solar System, the idea that an Academy based show has to be on Earth is ridiculous, at least to me. It's an automatic artificial limitation given the nature of Starfleet.
I mean, even in Space Cadet the main character's school is on an orbiting ship, and he goes to the moon for training, and then his apprentice cruise, which gets him marooned on Venus.
That doesn't include all the shenanigans from Trek lore, such as Pike's training cruise, Red Squad falling under Admiral Leyton's personal patrol, and the ship sent in to the Gamma Quadrant. It's not like the Academy is just high school melodrama. There's plenty of drama potential there.

One of the mission statements of Star Trek is to explore strange new worlds, in the 24th century Earth would met the definition of a strange new world. We just wouldn't have too leave at the end of every epiosde.

Not to mention the cadets that died the last time the Kolvoord starburst was attempted prior to "The First Duty".
Yeah, you could extrapolate how Earth would develop geo-socially. Would you see a good neighbourhood that becomes an Andorian "projects"? A v'tosh katur street gang? How would Humans, for that matter, change their living patterns on Earth?
American city's today have "little Italy" future San Fransisco will have "little Andoria" (all those great restaurants).
It doesn't necessarily have to take place entirely on Earth. In the TNG episode "The First Duty," the trial was based on training flights around Titan and Saturn. They don't spend all their time in San Francisco. Some of it is actually like flight school. And imagine the field trips!
