When TNG rolled out, people didn't like it, but it found its footing and became one of the greatest Trek shows ever made.
is at odds with this as TNG had two non human characters out of the main cast, and TOS one alien. Both are considered the greatest Trek shows, yet they primarily center on the humans responding to the alien situations.

True enough.

I think TNG did great, although in future shows, I wish they did more with alien crewmembers.
 
This is where the issues start here, is that the narrative and in universe elements have to suffer because of the studio and audience has a certain viewpoint of what the show should be. Star Trek shouldn't be afraid to be bold, when it is afraid to be bold, we get watered down plots.
Star Trek is owned by a corporation and as such it has to dance to that corporation's tune.

The shows do have a budget and it's cheaper to have human characters as there's no prosthetics or makeup to make them look alien.

Became one of the most popular Trek shows ever made, and as a result has become the template of what the higher-ups want Star Trek to be. And even then, TNG got lucky it was allowed to continue to the point where it gained popularity.
 
I'd definitely like a less human-centric Federation depending on the budget

Overall, I'd actually like a series set on a planet, maybe one further from the Federation, and/or on a smaller runabout-type ship
