In the end there was only one rock man made, from what I've read.If it counts...
I've not seen it, but I've read that for a brief second in "Star Trek V: The Final Frontier" you can see one of the rock men from the thankfully deleted rock men attack sequence.
I've heard you can see its hand punch through the shuttle precipitating Kirk's exit, but I can't say if that's accurate.In the end there was only one rock man made, from what I've read.

In Star Trek V: When Uhura is communicating with Paradise City "Can you try boosting your power? We're barely receiving transmission" you can see the upgraded version of the iconic earpiece, and it has little blinky lights on or in it.
If you watch this carefully (it's not evident in the screen capture here), it appears that this guy is there to give the appropriate cue to the blond woman who walks by just after this moment. You can see she's standing next to him for a split second and then she walks across the scene at the appropriate moment.There is a brief frame or two in the shot in TMP when Kirk disembarks for the air tram at Starfleet HQ, where you can see a film crew wearing a silver satin crew jacket, just behind the elevator bank structure as the camera pulls back for the tram (and extras walk by).
