I've not seen it, but I've read that for a brief second in "Star Trek V: The Final Frontier" you can see one of the rock men from the thankfully deleted rock men attack sequence.

I've heard you can see its hand punch through the shuttle precipitating Kirk's exit, but I can't say if that's accurate.
I only just found out a model of an environmental suit from the previous movies was displayed in the entrance of the Starfleet Officer's Lounge in TSFS:

Oh that's cool, never spotted that. Epsilon Station is hanging on the wall of the bar as well isn't it? The prop department must have raided the model store!

In Star Trek II, when Kirk and Carol are having their heart to heart in the cave, you can see Chekov is holding a cloth to his ear in a way he couldn't do if he were actually unconscious, so the dude is faking it to listen in for juicy gossip!
^IIRC, Chekov started coming to shortly before the scene in which Kirk and Carol were alone in the cave, so he could have been holding the cloth himself.
The ear-piece Uhura uses in ST:TMP is one she used in TOS. On the first day of filming, Nichelle asked the prop guy where her ear-piece was. They realised they hadn't made that prop - and two crew in-the-know went off to retrieve one from the archives! Filming commenced.
It's fun to watch the alien ambassadors in TMP's San Francisco tram scene. Two Rhaandarites stand inside the UFP symbol and give directions to an Arcturian. Three Andorian ambassadors stroll along and one female breaks off from the group. But, if you follow her, she walks purposely through the crowd and circles back, almost rejoining her colleagues. The huge Betelgeusian ambassador in the expensive robes is visible, but immobile. My guess is he is standing on a box.
Speaking of boxes, when Uhura, Chekov and Sulu evacuate the bridge (as related in "Chekov's Enterprise"), the director positions Nichelle on a box so she can be seen (but now too tall!) behind the others. To rectify the situation, Walter and George perch precariously on the edges of the same box, and try to keep their balance. Very funny to watch knowing the story.
Billy Van Zandt and Franklin Seales had a daily contest running on the bridge, deliberately upstaging each other in the background, to relieve the boredom of a three-month shoot with no dialogue (ie. the Rhaandarite's folded arms when Spock arrives; scratching an ankle with the toe of his boot when Ilia is in focus, etc).

In "Errand of Mercy" Kirk tells Kor, "Go climb a tree."
In TFF, he has a shirt that says "Go climb a rock." And this is as he's ordered to go Nimbus III where he might run into the Klingons. And, as McCoy says, "They don't exactly like you."

All that's missing is "take a hike", "fly a kite", "jump in the lake", and "take a long walk off a short precipice".
If you watch this carefully (it's not evident in the screen capture here), it appears that this guy is there to give the appropriate cue to the blond woman who walks by just after this moment. You can see she's standing next to him for a split second and then she walks across the scene at the appropriate moment.There is a brief frame or two in the shot in TMP when Kirk disembarks for the air tram at Starfleet HQ, where you can see a film crew wearing a silver satin crew jacket, just behind the elevator bank structure as the camera pulls back for the tram (and extras walk by).
