For me, it was sometimes more about a time period than an episode.
Like during the 'changeling scare' during the 4th season, before the war.
It was when anyone could be revealed to be a changeling.
When they did the promos for next week's episode it always left you with the feeling that it would happen. At one point a promo made me think Kassidy would be revealed to be a changeling, or replaced by one.
To me, they had more miles in that changeling scare than they used. But yes, it was good while it lasted!
Yes, I also thought there was more to come with that angle. It was that suspenseful.
At one point, around the time of For the Cause, I thought they were going to reveal that Kassidy, or someone close to him, was a changeling.
All the previous episodes kept leading up to this idea. It would have been messed up to do that, but you just never knew.

Another I was thinking of is Benny's speech in "Far Beyond the Stars"..."It's REAL!"
People say a lot of things about Brooks' acting, but IMO he did wonderful with that scene.
True, because you just never really saw raw scenes like that. There was The Outcast from TNG, but compare the two and you can see the difference.
I can live with it.

One of my favorite episodes.
Pretty much the whole episode worked for me, although I don't get why they needed someone to forge the holodeck program when the computer could do all the work.
Garak was amazing.
That entire episode was a classic.
And the ending where he says 'computer, erase that entire log', and the episode immediately fades to black, and then the closing credits.
Some more to add-- in For The Uniform, when Sisko orders the bio weapons to be launched on the Maquis colony.
He tells Worf once, Worf just looks at him and he tells him again "I
said launch torpedoes!"
And then when Eddington is arguing with him over the view screen, he cuts him off and yells at Kira to "shut that that thing off!!!" Sisko looks totally nuts in that scene.
Sacrifice of Angels, where the Federation fleet charges into the Dominion fleet. And later when the Klingons arrive just in time to help.
It was the first real time we got to see an actual fleet to fleet battle.
