CLOSING THE DEAL

If it's overall Trek, it has to be something from the Original Series to get someone into the groove of things. I would say something from the first series so as not to disorientate them too much - you don't want the absolute best episode to lead them to sudden disappointment later on, nor do you wish to subject them to the very worst and put them off. For that reason, I think "The Devil in the Dark" is probably the best one to start off with - it's a story that still holds up very well today. And it's one of my favourite of all the TOS episodes.
 
Devil in the Dark was my pick for TOS--just about my all time favorite Star Trek episode. There are no real villains, just a lot of misunderstandings, plus a happy ending.

I liked VOY and ENT but off the top of my head I'm not coming up with single episodes that I think might convert someone.

If you can talk her into watching a movie instead, I'd definitely go for The Voyage Home. That's what made me a fan.
 
City on the Edge of Forever and The Wrath of Khan totally worked on my previously non-trekkie gf.

The only thing I had to explain was how the crew magically got from the Enterprise to the surface lol!
