You are the casting director

Victor Buono appeared in just about every horror/crime/sf tv show and many movies. Surprised he didn't show up on Trek. Of course, he requires a big role.
 
It would have been a big-budget, high-profile, all-star cinema adaptation/expansion of the TOS universe, produced in the sixties, and starring Steve McQueen, Sydney Poitier, Yul Brynner, Raquel Welch, Sophia Loren, and Lee Marvin.

Lemme guess. McQueen is Kirk, Poitier is Bones, Brynner is Spock, Welch is Chek over, Loren is Uhura and Marvin is Scott? Looks like you're a man short. How about Bruce Lee as Sulu?

I was thinking of depicting a different ship and crew.

There have been English, Scottish, and Irish characters in various versions of Star Trek, so I would propose a Welsh character played by the IMO incredibly handsome Ioan Gruffudd (whose best-known role is, after all, Horatio Hornblower ;)).
 
I would have liked Sean Bean as Richard Sharpe and Pete Postlethwaite as Obadiah Hakeswill to have turned up in one of Bashir and O'Brien's holosuite programs, in this case, if they'd ever done the Napoleonic War. And when they'd say "Computer, end program", they'd not disappear, but be the real thing, having been brought there in some weird temporal glitch. I can just see ol' Obadiah getting up to some mischief with Quark.
