I like Jadzia/Julian (and I used to like it ever more). I never liked Julian/Ezri.

I suspect that the writers chose longterm romances based on which pairing could get the most different storylines. Hooking up Dax with Worf offered cultire clashes, Klingon romance, opposing personalities, and angst material from Worf. Hooking her up with Bashier wouldn't have given them nearly as much to work with.Let's be honest. Trek writers of the Berman era had a difficult time ever writing romantic relationships that worked. They could write one night stands. But actual, long-term, successful relationships? Didn't happen much. Really, the only ones that I can think of that seem authentic to me are Miles/Keiko and Worf/Dax.
