Maybe they plan some sort of dynamic between the doctor and nurse and feel there's enough material there to warrant both being part of the main cast. If anything, Star Trek far too rarely develops the department's staffs besides the senior officer and maybe one other recurring character on the staff. If anything this news seems a step in the right direction to me..why even have a nurse as a main character?

The line in question was that Kirk met Pike when he was promoted to Fleet Captain. It doesn't say anything about Kirk maybe sticking around for 3 seasons afterwards. So there's no issue.
Just to add to this, the fact that Kirk says he met Pike "when he was promoted to Fleet Captain" and not "When I took command of the Enterprise from him", would suggest that the later, did not happen. So we just need Pike promoted partway through the series. And that's good fodder for drama because Pike knows his fate at that rank. However, the fact that Mendez asks the question at all implies that Kirk doesn't get assigned to the ship. But if we ignore that (we can assume Mendez never looked at Kirk's personnel record), Kirk could replace Number One as first officer. Remember, in the Mirror Universe Kirk was First Officer of the Enterprise.
He also says, "Spock served under him for several years", not "Spock and I served under him". While Pike's promotion to Fleet Captain and Kirk taking over the ship from him could be separate events, I don't think previous continuity supports them knowing each other all that well or for any length of time.

A new show, a new crew, ocasional cameo, is just great, but Pike doesn't need Kirk, or scotty, or bones. These characters are already fleshed out, its just like the Solo movie.. no one really asked for it.

I suppose Kirk's appearance could be a guest shot in which he and Pike don't meet. Be interesting to see how they go about doing that.

I mean, there can be other black doctors on the Enterprise. It's probably M'Benga, but I wouldn't bet on it just yet.I'm a little confused by the idea of M'Benga potentially being part of SNW. I'd think he'd be a bit young during this time period?
I doubt the ship's chief engineer is an Ensign fresh out of the Academy. If she's on the show, she'll be one of the engineering staff, but not the chief engineer. Besides, according to Disco season 2, the Enterprise's chief engineer is a male.Is the woman from Ask Not going to be the engineer?
