Really stupid question but I tend to overthink things. Why are the reboots referred to as nu with that spelling? Wouldn't n-e-w make more sense? Is there a reason why it's spelled n-u?

Eh, there's a distinction to be drawn between poor literacy and jargon; one is a result of ignorance, the other isn't.
They were.Seriously, it's become a thing to use "nu" to indicate a reboot of an old property. Pretty sure people were referring to the Battlestar Galactica reboot as "nuBSG" long before the new Trek movies came along.
the use of the "nu" prefix is hardly nu.
