That would have been my guess based on the casting news, but it would seem odd to be that early. Unless there's a time skip between the first and second episodes where they develop a relationship. Although it certainly wouldn't be strange for a Trek character to get to that point in the course of a single episode!
It's all guesses until we see the episode though! Maybe Korby has a fiancée that leaves him, setting up what we already know.
Marriage of convenience/necessity, perhaps, that becomes genuine? Pike marries Batel before she dies?
If one doesn't take the original TOS episode quite so literally, it's really not that difficult to see how it all fits together.
The Star Trek shows have added a lot more insight to many things through the years and have actually improved just about everything touched upon, IF one isn't quite so inflexible.

Unless there's a time jump, any wedding that occurs won't be Chapel-Korby. I'm fairly sure they haven't even met yet.
And it definitely won't be Spock-T'Pring. I don't know if T'Pring has already started her fling with Stonn but things have definitely cooled between her and Spock.

Pike-Batel is whom I'd bet on.
But it still begs the question of why Batel isn't around in "The Menagerie".
I'm still afraid that Batel's Gorn infection is going to kill her. For precisely that reason.

I still think it's Jim Kirk/Carol Marcus. Admittedly having the SNW cast involved would mean that Kirk, Spock, Scotty and Uhura have a WAAY closer bond heading into TOS than we assumed (not even getting into Kirk and Pike).
And I know this is extreme wishful thinking but it'd be crazy if they could get Chris Hemsworth and Jennifer Morrison in for a cameo as Kirk's parents in a canceled wedding between Kirk and Carol.

I don't think it'll be Kirk and Carol. The way they acted towards each other in ST III would seem to make that impossible.
They may have floated about the idea, but I think they both knew deep down that their lives were just too different and getting married would just make them both miserable.
