I love Sisko. I mean, I really love him. And there are a number of reasons for this.
First, because he doesn't take any shit from anyone. From slugging Q to kicking Garak's ass in ITPM, to his oft quoted line that he used with Dukat on several occasions: "If you have something to say to me, SAY. IT!" Look at the way he went after Michael Eddington! The man takes no shit.
Second, I love him because he is three-dimensional. You see in his interactions with Jake that, despite the fact that he takes no shit, he is not a hardass with a always-by-the-book stick up his butt. He has a heart, and he truly cares about people. You see this also in his interactions with Jadzia, and to a lesser extent, Ezri.
Third, I love him because he has guts. What he did in Favor the Bold/Sacrifice of Angels took guts - first by confronting the Dominion when vastly undermanned...and second by confronting the Prophets and telling them, in no uncertain terms, to get off their asses.
As for Avery Brooks himself, I think that, once he was given more freedom to make Sisko into the man he wanted him to be, he was fabulous. I think that for the first couple of seasons, TPTB at Trek were trying to fit him into the white-guy-with-a-stick-up-his-ass-like-Picard mold...but the thing is that Avery Brooks' past acting history showed that he excelled, NOT at playing that sort of character...but at playing more of a badass character.
Once Avery Brooks was able to do with Sisko a small bit of what he does best, Sisko really came into his own.
