Go wild for a concept with the series set around the Enterprise F.
In my concept, after the Dominion War ended the Dominion would become the "Romulans" of the next era, with them retreating and being inclusive. Tensions remain cold after the war, with a Dominion Vessel not being seen by the Federation for many decades. The Klingon Empire would spend decades fixing itself, as well as the Cardassians and Romulans. The Federation would be so damaged from the war that exploratory missions wouldn't have been a priority - with the main essence of the first 30-40 years after the Dominion War having been reduced to fixing and stabilizing the Quadrant. The Cardassians would be reliant on the Federation for Aid, and would become a close Federation ally however they themselves would not join the Federation.
The Romulan Supernova never happens (I always found that whole plotline to be stupid) and the Romulans remain a rival to the Federation, with relations with them depending on whoever is in charge. The Klingons and Romulans revert back to their old rivalries decades after the Dominion War, with the Klingons having basically shed off most of the warrior class during the Dominion War, they are beginning to embrace new ways of thinking, while the Romulans double down on control and authority of their government, unveiling new classes of ships, etc over the years.
The Enterprise E would remain under Picard until Picard would finally take the promotion to Admiral many years after the Dominion War, with the Enterprise E having made some new contacts and exploration, but not quite on the level of the D. The Enterprise E would finally be damaged in some sort of conflict before it would be retired from service. Riker would end up becoming Captain of the USS Titan, before at some point later in his career becoming an Admiral as well. Worf would eventually become the ambassador to the Klingons, and Data - Data would begin to get interest in taking a Command role in Starfleet.
The Enterprise F would have begun construction around 80 years after the Dominion War, with Data becoming its Captain. The Enterprise F, in the state of new co-operation with the Cardassians would be a "joint ship" between the Cardassians and the Federation, as well as some Klingon elements as well. The crew would be a combined crew of Klingons, Cardassians and Federation, with Data's first officer being a Cardassian, an Andorian Doctor, a Human Security officer, and with the main science officer being a Klingon.
The USS Enterprise F would be tasked with exploring a newly discovered Wormhole - taking it into the Andromeda Galaxy, where the antagonistic Kelvan Empire lurks on the other side, while the Dominion is becoming more active, with perhaps the first episode of the series seeing the USS Enterprise F encounter Dominion vessels with a whole "We haven't seen them in half a century, the last encounter we had with them cost billions of lives..."
