Will Luke and Ahsoka's first meeting ever be depicted at all?

Well... will it?

My guess is that their first meeting will take place in the main Star Wars comic, now that it's moved into the post-OT era.

It would be neat to see some kind of animated short of it, though, with Hamill voicing Luke and Eckstein voicing Ahsoka.

Joking aside I would like to see more interaction between Luke and Ahsoka. She what the told each other about Anakin, the Jedi, Yoda, Obi-wan. She could tell look first hand about the Clone Wars, and have collaboration from Rex. See if Luke talked with Ahsoka about training Jedi when she took on Sabine. Stuff like that. I imagine some of Luke's training supplies came from Ahsoka's ship. There is so much there that could have happened, but we don't know how much was said or done.
Would Ahsoka be the only person besides Obi-Wan who Luke met that knew Anakin?

Maybe, but since almost everything related to Ahsoka has been written by Filoni, I'm thinking they'll leave their first meeting to him to write if we ever see it. I guess there's a chance that they could either bring Filoni in as a guest writer or at least consult with him when they work on that issue,
 
Captain Rex would be probably the only other member of the Rebellion that would have known Anakin Skywalker that likely knows Luke Skywalker, since Rex would likely have stayed under General Hera Syndulla's command. Well and there is R2-D2, but he doesn't tell tales.
 
Considering it'll most likely be written by Filoni and/or Favreau, I have zero interest. I hope they never touch Luke again given how badly they biffed his last appearance. Ugh.
 
The Mandalorian and Luke Skywalker's appearances in The Book of Boba Fett might have been an issue for the series itself (sidelining the main character for two episodes) but was probably the best Star Wars content put on screen. For the Mandalorian's appearence the questions about halfway through the episode about "where is Boba?" did come up, but once the story shifted to Luke, those thoughts went away. Boba didn't matter for a dozen or so minutes. This was Luke Skywalker training a student to be a Jedi. It was more or less what the fans had wanted to see for decades. Add in Ahsoka and you have something people never thought they would see. The Padawan of Anakin Skywalker talking with Luke Skywalker.

I'm not sure we longtime fans wanted to see Luke perpetuating the flawed PT-era teachings of non-attachment, which seems hypocritical and downright out of character, given the risk he took to (successfully) bring his own father back to the Light Side with a direct appeal to familial attachment. I sure didn't.

The Mando S2 finale, however, I did enjoy. And, in case anyone hasn't seen it... :)

The first meeting between Luke and Ahsoka is a helluva thing, Canon-wise. In emotional terms, it must be a hugely important moment for the two characters, but that doesn't mean there's a particularly dramatic and exciting story to accompany it.
How it went:

Luke: But you, Ezmo and others surviving makes Ben and Yoda, the weight they carry, gravely hiding away anticipating Me [and Leia] as their last and only hope, look like complete morons. They literally said the last of the Jedi will you be, it completely $#!ts on that. The whole point and drive of the story was there was no one else.
Ahsoka: Yeah but if you just add little things like time-travel, and other dimensions, and stuff, it works from a certain point of view.
