If the Star Trek Universe is depicted as an alternate reality from ours, then Mae Jemison could have been been involved in DY-100, or even an aged mentor to a young team of volunteers including Cochrane and Sloane.
There's no contradiction. Mae Jemison wasn't playing herself.
Don't forget the opening of Qpid when Picard is writing his speech in his ready room, and his Annotated Shakespeare book is opened on pages 354/355 which feature a picture of Sir Patrick Stewart playing Touchstone in an 1980s Royal Shakespeare Company production of As You Like It.

I just looked up Rick and Morty in Wikipedia. Infinite parallel universes. Why do I find myself thinking of a certain 7th season TNG episode (that was truly a tour-de-force for Michael Dorn as Worf). Or of a certain Robert Coover short story.
