How many humans a Klingon warrior can take on at the same time?

I tend to think that Humans and Klingons are generally matched. There are some Klingons that are stronger than the average Human, but there are also some Humans who are stronger than average and can give a Klingon warrior the fight for his life. It may truly depend on how much strength conditioning and combat training either a Klingon or a Human has, IMO.

Some Klingons have been depicted as being more aggressive with a kind of berserker mentality when they go into battle, but I would argue that some Humans are like that too. It kind of reminds me of what Quark once said on DS9...

"Let me tell you something about Hew-mons, Nephew. They’re a wonderful, friendly people...as long as their bellies are full and their holosuites are working. But take away their creature comforts, deprive them of food, sleep, sonic showers, put their lives in jeopardy over an extended period of time, and those same friendly, intelligent, wonderful people… will become as nasty and as violent as the most bloodthirsty Klingon."

The Physical Strength difference might also be accounted for by the average Klingon Height being much taller than the average Human Height, when was the last time we saw a "Short Klingon Adult Male or Female"?

Any sort of "Genetic Strength" difference might be exaggerated or the gap was closed over the centuries via subtle genetic editing in the human species w/o us knowing (Maybe Section 31 influence)?

It seems like every Klingon Warrior we encountered was > 6' tall, so larger warrior mass can account for the strength difference if the average human wasn't that tall.

Just look at Pro Wrestling and the difference between Big / Small atheletes.

Think of Chad Gable as a stand-in for us Humans and Braun Strowman as a Klingon.
With enough physical training, you too can also German Suplex a Klingon.

The average Klingon Warriors could be spending a disproportionate amount of time doing body building / strength training to maintain peak physical condition as part of their regular duties as a "Proud Klingon" warrior.

Chad Gable is 5', 8" (173 cm) former US Olympian
Braun Strowman is 6' 6.5" (199.40 cm) former Strong Man champion.

Also, in the era of Projectiles & Beams, that physical strength only really matters if you get into a melee battle.
