Food cubes

What are these prop food cubes made of? Cantaloupe, watermelon and...some green fruit...
 
Food concentrates. Mentioned twice in “Charlie X”.

Also, from page 342 of “The Making of Star Trek”:

“Aside from this futuristic equipment, Irving has also found himself from time to time in charge of such mundane things as fruits and vegetables. This happens whenever there is a scene involving food. Naturally, our space travelers of the future cannot be seen with ordinary fruit and vegetables, so Irving dyes the edibles a variety of space-age colors. Thus Star Trek people eat blue celery, bright kelly-green melons, and so on.”

In “Arena” McCoy says he is looking forward to Hansen’s hospitality because he “could use a good, non-reconstituted meal.”

Maybe you can take those food cube concentrates and reconstitute them into synthetic meatloaf, chicken salad, or plomeek soup. Or, just eat ‘em as they are. A meal in a mouthful. Red are protein, green are carbohydrate, and yellow, fat. Take a bite of each and it tastes like a roast beef sandwich, pizza, or ice cream, depending on your mood. :crazy:

As far as props go, wouldn’t they avoid real food due to the hot studio lights and subsequent visual deterioration ?
Usually coated in a preservative to keep the consistency across multiple takes. Or not real food stuff and created from the ground up from modeling and resin and the like. I recall being an extra being told "Do not eat it." as the preservative coating would make you very sick.
