Here was an idea that just came to me, because of the name (granted its already being used for another series, but it just works so well).

Set in the Prime Universe in the early 2250s, it follows a young Doctor Leonard McCoy, fresh from Medical School he is looking to engage in real "frontier medicine", trading his skills for passage from system to system. Aided by his former classmate and fellow surgeon Katrina Wakefield, they take in all that the galaxy has to offer, on a journey that marks the beginning of the legendary doctor's career.

Never heard of it before, but yes. Yes it does look like it.

Why not an original character on an entirely different ship or station. A Forensic Investigator with a Federation/Starfleet "Criminal Investigations Service" in the TMP-era that carries over to TNG. Trying to exonerate Starfleet personnel in modest to high-profile war crimes. or crimes on Earth against Starfleet officers while on shore leave or officers whom disappear right before their first assignment, etc. A disgraced Starfleet Doctor (or Security Officer) caught-up in some kind of scandal is expected to work out of a grungy basement office rather than Starbase 001 in San Francisco. Brought in to help when no other doctor / investigator wants to have his/her career smeared by being involved with the case.... or more specifically, him/her.

I'm sure more than a few people have had thoughts on Star Trek CSI/SCIS, I know I have.

This thing with it however would be the setting. A series like that based on Earth wouldn't work, as there is the fundamental principle that lfe on Earth is as near to "perfect" as possible. Humanity has become a socially highly evolved race, so the team would have to be somewhere else in the galaxy. Someplace like a remote station or planet, where the laws of the Federation and regs of Starfleet aren't firmly established.

Also with technology becoming as advanced as it is, how tough or challenging would the cases be?

Forensic Tech Smith: Sir, my tricorder is picking up Gorn DNA. No question, they are the culprit.
Computer Analyst Jones: According to station records, only one Gorn has been here in the last month. I have his ships ID code and heading. I've also put out a subspace alert throughout the entire sector.

Would be an interesting series, if it could be developed right IMHO.
