Will we see this in the title screen of the new film? I dunno if it was ever done in the previous films, but I do remember seeing it in the TV series after TOS.

No speculation necessary -- all the films have had that credit.
I think even Star Trek VI had it, and he was slightly involved with that movie. All the movies afterward had it, I know that.
His actual involvement in all the films after ST:TMP was slight.
Yeah, every Trek movie and TV series has carried the credit "based upon...created by" for Roddenberry. Doubtless this one will, too.
