Why USS Cerritos of all names?

I mean - why give a Latino-sounding name to one of “the least important ships in Starfleet” seemed like a good idea to the creators in these tense times?
 
I've just been running under the assumption someone involved with the show either lives in or grew up in Cerritos and thus the ship is the USS Cerritos.
 
Also, this is hardly the first Starfleet vessel with a Spanish-derived name. We've had canonical starships named Cortez, Havana, Pueblo, Veracruz, Zapata, and others, not to mention everyone's favorite runabout the Rio Grande and its sister ship the Orinoco. And the hero ship in Star Trek: Picard is La Sirena.
 
Living in SoCal the ship name is fine with me, though I don't think I have ever been to Cerritos. We will probably run into more ships named after California cities.
 
As for "least important ship"?

I thought those were supposed to be the runabouts and ships like that scout from Insurrection. Or that deuterium tanker from one of D.M. Phoenix's Ships of the Line illustrations.

Deuterium tankers are hardly unimportant; the other ships would be useless without them. Surely in the COVID era we've all been reminded of how essential delivery people and "menial" workers are to everyone's survival. It's unwise to mistake prestige for importance.
