I quite like Phlox. Honestly though, I'm fond of the supporting characters: Soval, Shran, Daniels, and Silik, with a shout out to Future Guy for just being plain weird.
T'Pol. Teenage love angst and a hard drugs phase in your 60's? Never too late.
I could point to something I like in several characters, but Porthos is frankly the only regular that I have no grievances for.
If we're including recurring characters, then Shran is a close second, since I love Andorians.

Hoshi - Wicked smart as season 3 and 4 proved but severely underutilized.
Trip - The character the audience can experience the story through. The pathos his character goes through during ENT is palpable. Not to be missed.
T’Pol - Dueling loyalties during the first 2 seasons, but she was a grand help throughout the show. Season 4 being a standout.
Archer - The first interstellar captain. Completely out of his depth from the jump. The TCW certainly derailed his path in the first 2 seasons. Archer proved his caliber and met the moment during the Xindi threat, charting the Expanse and trials season 4 put him through. The Augments, Klingon virus, Vulcan Kir’Shara arc, and Terra Prime.

I like all the main characters. Hoshi is my favourite - if I became an astronaut I wouldn't be able to cope anything like as well as she did. Trip and T'Pol had a lot of interesting character development throughout the whole show. Travis is the one I feel we know the least. I like that Admiral Forrest, Soval and Shran were all recurring characters as I think that helped with the feeling that the Federation was being formed.
Phlox, easily.
We were robbed when ENT didn't get its fifth season with him in the regular cast!

T'Pol, easily. Can relate a lot to her.
Malcolm Reed. Reserved, executive, serious and British - I love such qualities. 
Hoshi Sato. I love languages myself, so I can't help but like a character with a language talent.
Porthos. Are comments even needed here?
Phlox is undeniably cool and the best of all Star Trek doctors, but I didn't vote for him because he is overly sociable and I don't like polyamory accepted in his society.
