Talking about official stuff here, not fan designs. What bit of concept art do you love and what would you have loved to see onscreen?

For me it's got to be the Ring ship that could have been the Enterprise on TOS

Well it was the Planet of the Titans Enterprise and the asteroid space dock. :hugegrin:
I think now it's probably drawings of the ST3 spacedock, which feel a bit more like retro space-opera-ish, something from Terran Trade Authority.

Some of the concept art appears in licensed material. Eaglemoss is slated to produce the original Enterprise-C model, and the USS Enterprise XCV 330 ringship as rendered by Mark Rademaker.
 
Ricardo Delgado's early ops/bridge concept designs for DS9 are magnificent! I'd've loved to have seen them on screen. And his early concept for the Tears of the Prophets is actually tear-shaped (rather than the hourglass) and looks quite disturbing, somewhat biological, and definitely alien. The art is in Judith & Garfield Reeves-Stevens The Making of Star Trek Deep Space Nine book, but I can't find the aforementioned images online (there are a few others online, though).
Oh, and his Borg concepts for First Contact are quite grotesque - I wish that's how the Borg had been depicted on screen.

I dunno, but I always likes some of Eaves' earlier work for the Sovereign class, including the forward slanting nacelles and the moving nacelle pylons.

I also really dug some of the original designs for DS9.
