What is the best non-human species in Star Wars?

My vote?

The Mon Cala.

Amazing star-ships, a very "alien" look which required a effort to design and implement, noticeably alien speech pattern and breathing, a very memorable role (Admiral Ackbar) and a complete lack of backstory in the OT.
They just showed up, everyone accepted that they were part of the Rebel Alliance, one of them was in command and away we go.
 
To be fair if you subtract Jar-Jar and the horrible fake "island" accent, the Gungans weren't all that bad. They were very brave, had a beautiful (if horribly impractical) underwater city, and great "natural" tech.
 
Yoda. He's the only example of his race we've seen. I'd love to know more about this species.
 
From a design standpoint, I've always liked the Togruta (Ahsoka's race). The head horn/tentacles are interesting, and the facial designs are cool.
 
My first instinct is to say Falleen. Xizor and Shadows of the Empire as a whole were some of my favorite additions to the Star Wars galaxy back in the old Pre-PT days.

I haven't watched enough Clone Wars apparently, last I checked Maul was a Zabrak. No?
 
Yet, some are pure Human and pure Zabrak? I remember the Witches and Tenel Ka all being Human. Did they just ignore the previous material when they presented that stuff in The Clone Wars?
