Okay, 5th viewing, I paid closer attention to Uhura's earrings. She wears seemingly 3 different pairs and they are all exactly the same in shape, but their colour varies.
I believe they are all one pair of earrings with a colour changing tech option. In the bar her earrings are red. When she is getting assigned to the Farragut and then the Enterprise she is wearing amber coloured earrings.. but when we see her for the first time on Enterprise (when Kirk of the allergic puff hands finds her) she is wearing silver earrings which she wears for the rest of the movie. I really don't think Uhura would be either changing earrings before boarding Enterprise during an emergency OR carrying alternate pairs of earrings with her.
So.. these earrings change colour. Perhaps they are like the nailpolish in Total Recall which changed with a touch. Perhaps they cycle through a series of colours. Perhaps they change colour to match the enviroment and they are silver because the interior of the ship is mostly white. Whatever it is they are in my estimation rather nifty.
