I think Jack didn't die the way we think he did. Bodily he died, but incorporeally he lived on ... just like that other guy who partook in the golden showers. And that incorporeal Jack, over the course of two thousand years, grew to hate and resent Hurley. How dare Hurley usurp the protectorship? Jack is the one who wanted it. He's the one who fought for it. He even gave up his body for it. But worst of all, Hurley insisted that his fanfix of the Empire Strikes Back had a superior ending.
As the years rolled on, Hurley brought hundreds of people to the island, showing them his script for Empire. Entire studios were produced as his people tried to realize his vision. But every time, Jack countered them. Some he convinced that the original version was better. Others, he simply killed. He would take the form of those he killed and take their place in the filming process; flubbing lines, walking across the set during takes, and eating all the craft services.
In time, Jack developed a very cunning, a very crafty plan. The rules said he couldn't kill Hurley. But he could manipulate another into killing Hurley. Ben was the obvious choice, but Ben had long ago bought whole-heartedly into Hurley's script of reconciliation and father-son bonding. But there was another. One who perched in the trees, watching with ancient eyes, who had spoken the name of its prey eons ago...
In the end, Hugo had no idea how the Hurleybird got into his sleeping chamber. And he had never expected the thing meant to eat him. But it all made sense, he realized. It was their revenge for the hundreds of family-sized buckets he consumed in his first life. The world grew dark and somewhere, distantly, he heard a familiar voice scream, "Cluck you!"
