The Kelpians eat flowers and a seaweed-like substance. They are lean and rangy in build. Since they are not fish and do not eat fish, I wouldn't expect them to taste "fishy".
I am going to go with a gamey taste, the younger ones being milder. Kelpians kept in captivity (as in the Mirror Universe) will have higher levels of fats and will be a more neutral flavour than the free range Kelpians on Kaminar. Post-vahar'ai Kelpians are probably too tough and gamey to make pleasant eating without a lot of preparation and cooking hence the cull.
