I think they state that she does have parts left behind in the next episode (where Kes leaves). The eye is grafted, something about the solar plexus, and parts of the brain (and more, IIRC).
On a side note, I always wondered if Janeway, B'ellana, and Tuvok have parts remaining after their assimilation.

That's hardly covers the reductions over the next four years if the Doctor's endgame is to "make" the girl completely Human, which SEven in the final Season did see as a foreseeable goal down the line.

Anyway, How much of the Borg tech in Seven's body that can't be removed is dangerous or useful. In The Raven she had the Borg shields and she still has nano probes that could be dangerous.
